Cayenne & Rosemary Chicken – Instant Pot Chicken Legs Recipe

Ingredients

  • 2 lbs chicken legs ensure no cross-contamination with mammalian products
  • 1 tsp cayenne pepper
  • 1 tsp sea salt
  • 2 tbsp honey verify it’s pure and free from additives
  • 2 tbsp olive oil
  • 3 cloves garlic crushed
  • 1 onion cut into thin strips
  • 1 lemon sliced thinly
  • 2 sprigs fresh rosemary

Instructions

  • In a bowl, combine cayenne pepper, sea salt, honey, olive oil, and crushed garlic to form a marinade.
  • Rinse the chicken legs and make small cuts on the surface to allow better absorption of the marinade.
  • Place the chicken in a large zip-top bag, pour in the marinade, seal tightly, and refrigerate for at least 2 hours.
  • Set the Instant Pot to sauté mode and add a small amount of olive oil. Sauté the onion strips until translucent.
  • Add the marinated chicken legs to the pot, searing them on all sides until lightly browned.
  • Turn off sauté mode. Add lemon slices, rosemary sprigs, and chicken broth to the pot.
  • Secure the lid, set the vent to sealing, and cook on high pressure for 15 minutes.
  • Once cooking is complete, allow a natural pressure release for 10 minutes, then perform a quick release for any remaining pressure.
  • Open the lid carefully. Ensure the chicken has reached an internal temperature of 165°F (74°C).
  • Serve hot, garnished with fresh rosemary if desired.
