Ingredients

Meatballs

  • 2 pounds ground turkey
  • 2 eggs
  • ½ cup oats
  • 4 green onions chopped (plus more for topping)
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger paste

Sauce

  • 1 teaspoon olive oil
  • Sesame seeds for topping
  • 2/3 cup ketchup
  • ¼ cup tamari or coconut aminos for soy-free
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons ginger paste
  • ½ teaspoon freshly ground black pepper

Rice

  • 1 cup long-grain white rice
  • 1 1/4 cups water

Instructions

  • Prepare the Meatballs: In a large bowl, combine ground turkey, eggs, oats (or breadcrumbs), green onions, garlic, ginger paste, and olive oil. Mix until just combined (do not overmix).
  • Divide the mixture into 10 portions and roll each into a ball.
  • Set Up the Instant Pot: Add 1 cup of water to the Instant Pot and place the standard trivet inside. Arrange the meatballs on the trivet (they can be stacked if necessary).
  • Prepare the Rice: In a pressure-safe dish (e.g., Pyrex bowl), combine rice and water. Place the dish on a tall trivet over the meatballs.
  • Pressure Cook: Secure the lid on the Instant Pot and set the valve to sealing. Cook on High Pressure for 7 minutes. Once finished, perform a quick release of pressure.
  • Make the Sauce: Mix all sauce ingredients in a medium-sized bowl while the meatballs and rice cook.
  • Finish the Dish: Carefully remove the rice and meatballs from the Instant Pot. Brush the sauce over the meatballs using a pastry brush or spoon.
  • Serve the sauced meatballs over the rice. Top with sesame seeds and chopped green onions for garnish.
